Ingredients:
1 Cup of Brown Rice, uncooked
2 Large Scallions (Finely Chopped)
1 Shallot (Sliced)
4 Cloves of Garlic (Minced)
½ tsp Crushed Red Pepper Flakes
¼ Cup Extra Virgin Olive Oil
2 Tbsp Cilantro (Chopped)
1 Tbsp Red Wine Vinegar
½ Lemon (Juiced)
Instructions:
Boil water. Add rice and simmer until rice is cooked.
Add the scallions, shallots, garlic, and red pepper flakes into a mixing bowl.
Heat olive oil, on low, in a pan until hot. Then pour the oil into the mixing bowl over the shallot mixture. Stir and let sit for 10 minutes.
Mix the cilantro, red wine vinegar and lemon juice and combine it with the other ingredients.
Pour the salsa verde mixture over a bed of rice and serve.
