Ginger Garlic Shiitake Bok Choy Soup

This light soup is packed with vegetables, mushrooms, and aromatics that support immune and gut health. Ginger, garlic, and shiitakes bring anti‑inflammatory and antimicrobial compounds in a warming, low‑calorie broth.

Ingredients:

  • 3 Shallots (Diced)

  • 1 Small Daikon Radish (Julienne)

  • 2 Medium Carrots (Julienne)

  • 4 Cloves of Garlic

  • 2 Tbsp Ginger (Fresh)

  • 2-3 Green Onions (Greens for Garnish)

  • 32-40 oz. Chicken Broth

  • 2 Tbsp Tamari

  • 2 Star Anise

  • 10 oz. Shiitake Mushrooms

  • 1 ½ Heads of Bok Choy

  • 1-2 Tbsp Olive Oil

  • Red Pepper Flakes (Optional Garnish)

  • Sesame Seeds (Optional Garnish)


Instructions:

  1. Prepare vegetables and set aside.

  2. Add olive oil into a pan on low heat. Saute shallots, green onions (white portion), garlic and ginger.

  3. Add 32-40 oz. of chicken broth with tamari and star anise (whole), and simmer for 10 minutes.

  4. Discard star anise after 10 minutes.

  5. Add shiitake mushrooms and simmer for 10 minutes.

  6. Add bok choy and simmer for 5 minutes.

  7. Garnish and serve.
