This salad brings together bitter greens, fennel, and apple for a digestion‑supportive, fiber‑rich combo. Walnuts and parmesan add healthy fats and protein to make it more filling and blood‑sugar steady.

Ingredients:

  • 1 Fennel Bulb and Stalk (Thinly Sliced)

  • 1 Granny Smith or Honey Crisp Apple (Thinly Sliced)

  • 1 Cup Arugula

  • 1 Cup Dandelion Greens

  • 2 Cups Butter Crunch Lettuce

  • ¼ Cup Extra Virgin Olive Oil

  • 1 Lemon (Juiced)

  • 1-2 oz. Parmesan Cheese (Grated or Shaved)

  • ¼ Cup Walnuts

  • Salt and Pepper (to Taste)


Instructions:

  1. Combine the fennel, apple, and salad greens (arugula, dandelion greens, lettuce) in a bowl.

  2. In a small bowl or jar, mix the olive oil and lemon juice together.

  3. Pour the dressing over the salad and toss gently.

  4. Add parmesan cheese, walnuts, and salt and pepper.

  5. Serve and enjoy.
