This omelet delivers protein and healthy fats from eggs to keep you full, with spinach and mushrooms adding fiber and key micronutrients. It’s a satisfying, low‑carb option for a nourishing breakfast or light dinner.

Ingredients:

  • ½ Cup Mushrooms (Sliced)

  • 1/3 Cup Onion (Sliced)

  • 2 Tbsp Butter

  • 3-4 Eggs

  • ¼ Cheese (Shredded)

  • 1/2 Cup Fresh Spinach

  • Salt and Pepper (to taste)


Instructions:

  1. In a small skillet, add 1 Tbsp butter and lightly sauté onions and mushrooms.

  2. In another skillet, add 1 Tbsp of butter. Scramble the eggs and add them into the pan.

  3. When the eggs are almost done, add spinach, mushrooms, onions, and cheese.

  4. Fold the omelet and remove from the pan. Add salt and pepper.

  5. Serves 2.
