This cozy bowl pairs protein- and fiber-rich quinoa with antioxidant-packed dark chocolate and berries. It’s a more blood sugar-friendly spin on a chocolatey breakfast or dessert, with healthy fats from coconut milk for staying power.

Ingredients:

  • 1 Cup Quinoa

  • 2 Cups Coconut Milk

  • 1 Pinch of Sea Salt

  • 2-3 Tbsp Dark Chocolate Chips

  • 2 Tbsp Maple Syrup

  • ½ Vanilla Extract

  • ¼ Cup Pomegranate Seeds

  • ½ Cup Mixed Berries


Instructions:

  1. Rinse and strain the quinoa.

  2. Add quinoa to a hot pan and toast for 3 minutes, while stirring.

  3. Add milk and salt to quinoa and bring to a boil. Reduce heat and cook uncovered for 20-25 minutes.

  4. Remove from heat and add chocolate, maple syrup, and vanilla.

  5. Serve, add fruit, and enjoy.
