This cozy bowl pairs protein- and fiber-rich quinoa with antioxidant-packed dark chocolate and berries. It’s a more blood sugar-friendly spin on a chocolatey breakfast or dessert, with healthy fats from coconut milk for staying power.

Ingredients:
1 Cup Quinoa
2 Cups Coconut Milk
1 Pinch of Sea Salt
2-3 Tbsp Dark Chocolate Chips
2 Tbsp Maple Syrup
½ Vanilla Extract
¼ Cup Pomegranate Seeds
½ Cup Mixed Berries
Instructions:
Rinse and strain the quinoa.
Add quinoa to a hot pan and toast for 3 minutes, while stirring.
Add milk and salt to quinoa and bring to a boil. Reduce heat and cook uncovered for 20-25 minutes.
Remove from heat and add chocolate, maple syrup, and vanilla.
Serve, add fruit, and enjoy.
